I was so excited to share this recipe with you. I mean, these baked Taquitos are just a dream! I'm really annoyed that they are not standing in front of me now.

I like using corn tortillas because some can crack or break during cooking, but it's not like a flour tortilla. The corn tortillas are a little more flexible and also crispy in the oven.

But my personal favorite is having them for dinner. They feel like a bustle. They are different from our normal weekday meals.   • 2 (14 ounces) cans of black beans (drained and rinsed)
  • ½ red onion (diced)
  • 1 green pepper (diced)
  • 3 cloves of garlic
  • 1 teaspoon of chilli powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon caraway
  • Pinch of cayenne pepper
  • pinch of salt
  • fresh cracked black pepper
  • 1 cup low sodium vegetable broth
  • 1 lime (juiced)
  • 12 4-inch corn tortillas
  • 2 tablespoons of olive oil / avocado oil OR olive oil / avocado spray or mist
  • fresh coriander to serve
  • Grated salad for serving

Avocado pico

  • 2 cups of grape tomatoes (quartered)
  • ½ red onion (diced)
  • 2 green onions (thinly sliced)
  • ¼ cup chopped fresh coriander
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 1 lime (juiced)
  • 1 or 2! Avocados, (chopped)
  1. Preheat the oven to 425 degrees. Fill the baking tray with olive oil or avocado spray (you can also spread it over the entire plate, which helps to make the underside of the Taquitos crispy.).
  2. Black beans, onions, pepper, garlic cloves, chilli powder, paprika, cumin, cayenne pepper, salt and pepper in a saucepan over medium heat. Add broth and lime juice and stir. Boil the beans uncovered and stir occasionally for 10 to 15 minutes until the mass begins to reduce and thicken. Set it aside to cool down. Remove the garlic cloves from the beans.

  3. Lightly warm the tortillas for about 10 minutes before rolling the Taquitos so they do not break. I cook it either for 1 to 2 minutes in the oven, for 10 to 15 seconds in the microwave. I suggest doing three or more at the same time.
  4. Add 1 to 2 tablespoons of the black bean mixture to the center of the tortilla. Roll it up and place it with the seam down on the baking sheet. Repeat this with the remaining tortillas and black beans. If you still have beans left (which you're likely to do!), They're great as side dishes or French fries! Spray the outsides of the tortillas with the oil mist (or brush them) – make sure the whole is covered.
  5. Bake for 20 to 25 minutes or until the tortillas are golden yellow and super crispy! Serve immediately with the avocado pico. I also like to serve with extra coriander and grated salad.

Avocado pico

  1. Mix tomatoes, onions, cilantro, salt, pepper and lime juice in a bowl. You can do this up to an hour in advance (it also takes a day in the fridge!). Just before serving, stir in the chopped avocado. Serve on the side or on the Taquitos. It is also delicious with fries!
