Since I have children, I am obsessed with Valentine's Day. I do not know what it is! It's not just the day – it's the small season before any holiday that is so exciting to "party" with. Max gets excited to hang up our little decor for Valentine's Day.

He still calls it ValenTIMES Day and I can not stand to tell him otherwise because it's so cute.

It's one of those words that I secretly hope he always pronounces as he says now.

Anyhoooo.

I made this mini peach hand cake in the summer and feel like making a few hearts all year long!

It makes me totally excited to have another use Mother Lovett's Pate also. She's probably making wagon wheels in her grave right now because I've done more with her pie crust than we ever imagined!

Says that the person who grew up does not care about cakes.

Insane!

Full disclosure: Raspberries are probably my least favorite fruit and I do not lose my thoughts on Nutella like most people do. BUT. The combination of these two together? Ooooh, it's good. It is decadent and tastes of heaven.

It's also great fun with kids! Well, the cutting dough piece is. The filling … maybe not so much. But what I love about Mini Pies is when the delicious berry filling comes out during baking time. It is so alive and pretty and makes the taste of the crust much better.

I used a mini heart cookie cutter that I found on Target several years ago. You can make all sorts of pies you like so you get less than two dozen of them, but I have more room for ice cream!

I got raspberry compote (or something like that?) A quick, improvised raspberry compote of frozen raspberries. That way, if you can not find any great berries right now, grab some frozen ones and you're ready to go. You could also use your favorite canned food for emergency.

A pile of juicy, syrupy raspberries and Nutella lies in the middle of a superflous and buttery crust. These are SO good from the oven, served with vanilla ice cream, in addition to raspberries and a Nutella spoon that melts in the bowl everything.

The best Valentine's Day!

P.S. Let's go over the part of how these mini-gingerbreads look like a scene from Dexter when they are covered with extra raspberries.

If you need some ideas, I did Nutella s & # 39; mores pop tartlets with puff pastry and they are a dream. I also did one with you Sour cherry jam and smoked cheddar! Equally delicious. These Amaretto brownie heart will fall in love with you (how will the heart casserole – Hello!) And who can forget the cabernet latte that I shared last year?!

Make sure.

Maybe do it today. It was a week.

crust

  • 2 cups sifted all-purpose flour
  • 1 tablespoon of sugar
  • 1 teaspoon salt
  • 1 big egg slightly beaten
  • 1/2 teaspoon white vinegar
  • 1/4 cup of ice-cold water
  • 3/4 cup cold unsalted butter cut into pieces, (12 tablespoons)

filling

  • 2 ½ cups frozen raspberries
  • ½ cup) sugar
  • ½ cup of Nutella
  1. Add flour, sugar and salt to a food processor and pulse until blended. In a small bowl stir the egg, the vinegar and the water together. Pour the cold pieces of butter into the food processor and pulse until small coarse crumbs remain. Sprinkle the water-egg mixture over the flour and pulse again until the dough comes together.
  2. Remove the dough with your hands and wrap it in a plastic wrap. Put in the refrigerator for 30 minutes.
  3. Heat the frozen raspberries and sugar in a saucepan over medium heat. Cook until it bubbles and the fruit is soft and slightly syrupy (about 10 minutes). Let it cool completely.
  4. Preheat oven to 375 degrees. Lay the baking sheet with parchment paper. Fill a small bowl with water.
  5. Roll out the dough until it is about 1/4 inch thick. Use a 2-inch heart cooker to cut hearts out of the dough. Make sure you save an even amount as you squeeze them!
  6. Put the hearts on the baking sheet. Fill in every second round with a teaspoon of Nutella and sprinkle with a teaspoon of raspberry mixture. Dip one finger in the water and guide it along the outside of the dough with the filling. Put an empty heart on the filled heart. Press the outer sides down with a fork to close the hearts together. Repeat with the remaining hearts.
  7. Beat the egg and the water together. Brush it on all the cake and sprinkle it with coarse sugar. Cut up with a vegetable knife and "x".
  8. Bake the cakes for 20 to 25 minutes or until golden brown. Remove and allow to cool slightly. Serve with vanilla ice cream!
